Minor Frostbite In My Toes

Battered squid or Roman

A common way to eat squid are battered or Roman market yesterday I bought some fresh squid, I show them my way.


Ingredients for 4 people:

2 whole fresh squid 300 gr. each.
approx 3 fresh eggs
250 gr.
tempura flour 50 ml. cold water and salt

Maldon salt Olive oil for frying 1 lemon



started to clean the squid: bit the heads off the tentacles stretching carefully because we have to get whole Ink area so we are not imbued with squid ink, once we get that part stretch the part that is known as "the shell" or cartilage, which is a part thin, transparent, flat attached to his body, this comes easily. Finally we remove the pinkish skin that covers the whole squid.


We wash well and started to cut squid, for this first remove the two flaps that are attached to the squid, then began to cut into slices about an inch thick each approx. The portion of the fins cut into strips and the head left only the tentacles. Wash again, drain well and salted.

In a bowl put the 3 eggs and beat them well (I advise not to use the blender to make the dough), a pinch of salt and we're throwing half the flour little by little, have no to be smooth, add a little water and continue pouring the rest of flour until a slight but uniform mass.

We took the rings of squid in the mixture and let rest about 15 minutes, after that period of time we put a fryer with hot olive oil and fry the squid we slowly pouring one by one the rings, small amount each time so we were not sticking and care that are not deep fried, as they have to be juicy.



drain on a paper towel to remove excess oil, squid do not have to be oily, rather dry of oil. If you want you can add a few drops of lemon juice over but this will remove the taste of the squid. Serve sprinkled with a little Maldon salt and a few thin slices of lemon.

Notes:

- If you do not have tempura flour, you can add a tablespoon of Royal yeast to flour and eggs, in this case let the dough ferment for about 30 minutes.
- Although it sounds complicated it is very easy to clean the squid, but if you want that extra work is better to ask at the fish that you cut and clean the squid, it's worth as the difference in taste with the frozen does not have " color. "
-look if the squid has pink skin, never buy the squid already peeled and sliced.
-squid ink can be removed with his bag and freeze the other day to take advantage of a black rice.
